Veggie Quiche

Super easy breakfast whether you are whipping it up for a group of people or just yourself!

Although eggs and veggies are a typical breakfast, something about throwing them into a pretty dish and adding a few extra ingredients makes it seem like such a treat.

Enjoy this quiche with a side of fresh fruit and you are good to go! Enjoy


Ingredients:


6 eggs

3/4 C full fat coconut milk

Salt & pepper to taste

2 Tbsp nutritional yeast

2 Tbsp coconut flour

3 handfuls spinach

2 cloves garlic, minced

1 1/2 C mushrooms, chopped

1/2 C cherry tomatoes, cut in halves

1/4 C green onion, chopped



Directions:

preheat oven to 350 F & spray 9 inch baking dish with cooking spray.


- Heat 1 tablespoon of olive oil in frying pan over medium heat. Add garlic and sauté for about one minute. Add in spinach and sauté for another 2-3 minutes until spinach begins to wilt. Set aside while you prepare egg mixture.


- Whisk eggs, salt, pepper, and coconut milk together in a large bowl. Add in nutritional yeast, coconut flour, and mix until there are no clumps.


- Add the garlic and spinach as well as the rest of the veggies into the egg mixture and stir to combine. Pour mixture into prepared baking dish.


Bake for 35 minutes or until eggs are set.
