Puffed Quinoa Granola

Trust me! you are going to want to give this recipe a try!

2 C Puffed Quinoa
3 Tbsp Protein powder of choice (I used plant based)
1 Tbsp Ground flax
1 Tbsp Chia seeds
1 C Shredded unsweetened coconut
1/2 C Chopped pecans
1/2 C Raisins (check ingredients to make sure there is no added sugar)
1/3 - 1/2 C Maple syrup depending on sweetness desired
1/4 Cup Melted coconut Oil
Preheat oven to 350
Mix all ingredients together in a large bowl. If mixture is too dry you can add in a little extra maple syrup or coconut oil.
Spread mixture out on cookie sheet lined with parchment paper and bake for 10 - 12 minutes.
Let the granola cool for 10 to 15 minutes and then break up into pieces.
Store at room temperature in an airtight container.
Eat with almond milk, on top of yogurt, in your smoothie bowl, or by itself!
