Probiotic Coconut Yogurt

I remember when I lived in California I would buy a $13 tiny jar of probiotic coconut yogurt from the natural foods store every once in a while as a treat because it was far too expensive for the amount that I got to purchase it regularly. Finally I decided to try it myself and it turned out so well and its so rewarding knowing I made it as fresh and pure as it gets (and also cheaper).
Probiotics have a handful of benefits including improving digestion, your immune system, and also play a role in balancing our hormones. Making a probiotic coconut yogurt is just a fun and delicious way to get all of those benefits in.
What you will need:
2-3 Fresh coconuts (young coconuts)
2 Probiotic capsules
Cheesecloth
Food processor or blender
Directions:
Cut the top off of the coconut and drain coconut water. Scoop out all of the coconut meat and remove any leftover coconut rind.
Place the coconut meat in your food processor or blender and add 2 Tbsps of the coconut water. Blend on high speed until smooth, adding more coconut water as you go to get the desired texture.
Once the coconut is blended and smooth, transfer into a bowl and stir in the powder from probiotic capsules (do NOT use any metal utensils at this point once probiotics are added).
Cover the coconut yogurt with cheesecloth and store in a cool dark place such as a cupboard for 24-48 hours.
When the coconut yogurt is ready to eat it will be less sweet and have more of the tangy yogurt taste that you are looking for.
Add in your favorite berries or granola and enjoy!
Note: Through the process of making this yogurt make sure that all tools and your hands are sanitized and dry.
