Gluten-Free Lemon Bread

If you love lemon you NEED to try this recipe. So yummy and giving me major spring vibes!
WARNING: You will want to eat this icing by the spoonful!
Ingredients:
1 1/2 C gluten-free flour blend
1 tsp baking powder
1/2 tsp salt
1/2 C maple syrup
2 eggs
1/2 C coconut oil, melted
1/2 tsp vanilla
Zest from 1 lemon
3 Tbsp lemon juice
Icing:
1/2 C coconut oil, melted
1 Tbsp maple syrup
2 Tbsp lemon juice
1 scoop vanilla protein powder
Directions:
- Preheat oven to 350. Spray an 8.5 x 4.5 bread pan with nonstick spray and set aside.
- In a medium mixing bowl, mix together flour, baking powder, and salt.
- In a separate bowl mix together maple syrup, eggs, coconut oil, vanilla, lemon zest, and lemon juice. Stir into the dry mixture until just combined.
- Pour batter into the prepared pan.
Bake for 45-50 minutes
Icing Directions:
While the bread is cooling, mix together coconut oil, maple syrup, lemon juice, and protein powder. Continue to mix every few minutes as the icing starts to set until it reaches the desired consistency. Use a knife to spread icing over the cooled lemon bread.
