Almond Butter Sandwich Cookies

Christmas is approaching which means all of the cookies! If you are looking for a delicious yet healthier alternative these sandwich cookies are perfect and easy to make!


1/2 C Almond flour

1/2 C GF all-purpose flour

3 Tbsp Vanilla protein (optional)

1/2 tsp Baking soda

1 tsp Salt

1/2 tsp Cinnamon

1 Egg

3/4 C Almond butter

1 Tbsp Coconut oil

1/2 C Maple syrup

1 tsp Vanilla


Mix together all dry ingredients. In a separate bowl mix together all wet ingredients, then slowly add in dry mixture. Roll into balls then flatten out on cookie sheet using a fork.

Bake at 325 F for 8 - 10 minutes. For the filling I mixed together almond butter, a little honey, and salt.
