Almond Butter Banana Bread

Gluten-free Dairy-free Refined sugar-free


I don't know about you, but banana bread is one of my all-time favorite baked goods. It's easy, and a great way to use up any bananas that are on their way out.


I have made many variations of banana bread but I have to say this is my favorite one yet!

Fluffy, moist, not overly sweet, a nice balance of salt, and great for breakfast, a snack, or dessert. I know a lot of people like chocolate chips in their banana bread so you can absolutely add some to this recipe if you would like!








Ingredients:


2 large ripe bananas, mashed

3 eggs

1/2 C almond butter

1/4 C maple syrup

1 1/2 tsp vanilla


2 C almond flour

2 tsp cinnamon

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt


Directions:


Preheat oven to 350f

Spray loaf pan with nonstick cooking spray, then set aside.


-Beat eggs together until fluffy, then add in mashed bananas, almond butter, vanilla, and maple syrup.

-In a separate bowl combine all dry ingredients.

-Pour the wet mixture into the dry and mix until just combined.

-Transfer batter into loaf pan and bake for 35 - 40 minutes.


I personally like to keep my banana bread in the fridge because I love it cold... I know, unpopular opinion!
